Lately I've been craving one thing and one thing alone…Chocolate chip cookies. By thebucketful.I made so many batches in the last week that I ran out of butter, flour, AND chocolate chips!

Seriously. Who runs out of flour??

I sent my hubby on a late night run for the butter and flour, but chocolate chips are one of the things I buy from Costco so I decided to hold out on purchasing those. But that left me with a lingering dilemma… How can you whip up a chocolate chip cookie recipe without chocolate chips?!?!

You can't, of course.

Being the OCD frugalista extraordinaire that I am, I got scrappy and came up with a solution. I grabbed my Cadbury Mini Eggs that I stock up on and made the most amazing chocolate chip cookies.Ever.When it comes to Easter candy, Cadbury Mini Eggs are my absolute favorite and are one that I stock up as soon as those babies hit the shelves and make them fit into my grocery budget!

And you better believe that once they go on sale at the end of season, we stash away as many bags as we can afford. Anyone else guilty of this? They freeze so well and they're basically my favorite candy on the face of the planet. So I need year-round access!

HOW TO MAKE COOKIES WITH LEFTOVER CANDY

If you don't have any chocolate chips and you don't have any Cadbury Mini Eggs, don't panic! Pretty much any leftover chocolatey candy will work. We always have some kind of leftover candy in our house, especially from Easter, Halloween, and Christmas.

Give your candy a good, rough chop, but be sure to leave lots of big chunks! (Who doesn't love chocolatey, chunky cookies?) Make the dough like usual, but substitute the candy in place of the semi-sweet chocolate chips.

They are extra sweet since the chopped up Mini Cadbury Eggs are milk chocolate instead of semi-sweet chips. These chocolate chip cookies are a BIG win in my book!

MAKE A BIG BATCH AND FREEZE

If your family goes bonkers for this chocolate chip cookie recipe like mine does, then do yourself a favor and make an extra big batch! They freeze so well and you can pull out a few at a time so you're not tempted to eat the whole batch in one sitting. Not that that's bad, or anything…

Make your chocolate chip cookie recipe as usual. Allow your cookies to cool completely. Line a cool cookie sheet with parchment paper and put your cookies in a single row in the freezer. Once frozen, transfer to a freezer bag or an airtight container and freeze for up to three months. When you're ready to eat them, pull them out of the bag and allow them to thaw at room temperature.

Chocolate Chip Cookie Recipe Using Leftover Candy

Quick and easy chocolate chip cookie recipe with the most delicious leftover candy make for the perfect chocolate chip cookies!

Ingredients

  • ½ cup salted butter
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 1 tsp vanilla
  • 1 egg
  • 1 ½ cups flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup chocolate chips or chopped chocolate candy

Instructions

  • Preheat oven to 350°F. Microwave butter for about 30 seconds until soft, but not entirely melted.

  • Beat butter and sugars until creamy. Add the vanilla and egg and beat well on low speed.

  • Add flour, baking soda, and salt. Mix until dough forms crumbles. Add the chocolate chips or roughly-chopped chocolate candy – Cadbury Eggs are always a crowd pleaser!

  • Roll the dough into balls and place on a baking sheet. Bake for 8-10 minutes until the cookies are puffy and light golden brown. Don't bake too long!

  • Let cool on baking sheet and enjoy with a nice big glass of milk.

Notes

Store any leftovers in an airtight container at room temperature. Throw a piece of bread in with them to help them stay soft!

You can also freeze them! Allow them to cool completely, then store in a freezer bag. Thaw on the countertop before devouring.
