You might be wondering what the difference is between corn dogs and pronto pups. Corn dogs, like their name implies, contain more cornmeal than flour in their batter. Pronto pups on the other hand contain more flour than cornmeal (and often times without any cornmeal) which gives them a lighter batter. They are both cooked similarly in that they are hot dogs on a stick that are coated in a batter and deep fried.

ingredients

1 cup all-purpose flour
2/3 cup yellow cornmeal
2 tablespoons sugar
1 1/2 teaspoon baking powder
1/2 teaspoon dry mustard
1/4 teaspoon salt
2 tablespoons shortening
1 egg, beaten
3/4 cup milk
10 wooden craft stick
1 pound hot dogs
cooking oil
ketchup, optional
mustard, optional

directions

Combine the flour, cornmeal, sugar, baking powder, dry mustard, and salt in a bowl. Cut in the shortening with a pastry knife until the mixture resembles fine crumbs.

In another bowl, beat the egg and milk together until blended. Stir the egg mixture into the flour mixture until smooth. Add more milk if needed to create a thick batter.

Pour oil in a deep, heavy skillet to a depth of 1-inch. Heat it to 365 degrees F over medium heat.

Insert a wooden stick in one end of each hot dog. Dry off each hot dog with paper toweling. Dip each hot dog into the batter to coat it completely, leaving the stick uncoated. Place the coated hot dogs, 3 at a time, in the hot oil (or as many as will fit without crowding in the skillet). Turn the hot dogs a couple of times to "set" the batter, then cook for 2-3 minutes longer, turning once halfway through the cooking time.

Remove the pronto pups from the oil and let drain on a rack or absorbent paper while you cook the remaining batches. Serve hot with ketchup and mustard for dipping if desired.

recipe tips

For a smoother batter, sift the flour, cornmeal, and other dry ingredients together before mixing.

Chilling the hot dogs in the refrigerator before coating can help the batter adhere better.

Twist the hot dog slightly as you dip it into the batter to provide an even coating.

Use tongs or a fork to carefully insert and remove the pronto pups from the oil to avoid burns.

Letting the fried pronto pups rest on a wire rack helps prevent them from becoming soggy.

Experiment with dipping sauces beyond ketchup and mustard, such as barbecue sauce, ranch dressing, or honey mustard.

Always supervise the frying process closely to keep the correct oil temperature and prevent overcooking.

Cut slits in the hot dogs and insert small slices of cheese before coating them with batter for a cheesy surprise.

common recipe questions

What type of oil is best for frying Pronto Pups?

Peanut oil, canola oil, or vegetable oil are ideal for frying due to their high smoke points, which provide a crisp exterior without burning.

Can I make the batter ahead of time?

Yes, you can prepare the batter up to an hour ahead of time. Keep it refrigerated until ready to use, but it may thicken upon standing, so stir well and adjust consistency with a little extra milk if necessary.

How can I make sure the batter sticks to the hot dogs?

Make sure the hot dogs are completely dry before dipping them into the batter. Moisture on the hot dogs can prevent the batter from adhering properly.

What can I use if I don't have a pastry knife to cut in the shortening?

If you don't have a pastry knife, you can use two knives to cut the shortening into the flour mixture or use your fingers to rub the shortening into the flour until it resembles fine crumbs.

Can I use a deep fryer instead of a skillet?

Yes, a deep fryer can be used and may provide more consistent heat. Set the temperature to 365 degrees F and fry the pronto pups according to the recipe instructions.

Is there a gluten-free version of this batter?

For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend. Check the blend for xanthan gum, which helps mimic the texture of gluten, or add 1/4 teaspoon if it's not included.

How can I tell when the oil is at the right temperature?

Use a cooking thermometer to check the oil's temperature. If you don't have one, drop a small amount of batter into the oil; if it sizzles and comes to the surface quickly, the oil is ready.

What are some variations for the batter?

You can add spices like paprika, garlic powder, or cayenne pepper to the batter for extra flavor. A tablespoon of honey or maple syrup can also be added for a subtle sweetness.

Can I make these in an air fryer?

No, wet batters such as this do not work well in an air fryer or oven.

How long can I store leftover Pronto Pups?

Leftover Pronto Pups can be stored in the refrigerator for up to 2 days. Reheat in an oven preheated to 350 degrees F until warmed through, about 10 minutes.

The first couple I dipped in the batter I had forgotten to dry off so the batter didn't stick. The rest worked fine once I corrected my error. These were a bit messy to make but tasted great!

We have a pronto pups place in Grand Haven , Michigan. Very good place to get the pronto pups. So good that there is a good size line.

These are the real deal! I haven’t been able to get to the State Fair in several years and I’ve been so sad. Pronto Pups are my favorite. I felt like I was home! Thank you!

In 1962, my boyfriend and I lived in San Francisco. Next to Sutro Cliff was a Pronto Pup stand. Unfortunately, like all good things, it is no longer there. Hopefully these will be what I remember to this day, 58 years later.
