This chicken curry is one of the most popular recipes on the blog. The old pic wasn't doing justice to the recipe and I wanted to give it a makeover for quite sometime. Finally I got around to it and took a decent pic, along with step by step pictures. If you've already tried this recipe, you know how good it is and if you haven't tried it yet, make sure you do! It's a good one.
So, here you go to the original post.
Let's just pretend that there wasnt a small break in between the posts. After all, without the game of the pretending, its kinda impossible to deal with the stuff around you, right? While we are still on the game of pretending… for the past few days, I was pretending that I didnt have a food blog at all! There's no MariasMenu, no dotcom, nothing…. I just wanted to cook, without worrying about teaspoons & tablespoons, without worrying about how to plate the dish, without worrying about whether I'll get the right color in the photos, without worrying about what to write as intro etc etc..you get the picture, right? I guess, now that phase is over and I'm slowly switching back to the blogging mode. There is a reason why I did that, but I'll tell you about it later ;)
About this recipe…somehow I've a soft corner towards recipes that have ‘roast' as its surname. Yeah, I do love their family. They usually have a thick bonding between the ingredients (read thick gravy) & some how I like that strong bonding thing ;) I'm referring to the Kerala style roasts here. One of my fav recipes here is theprawns roast, I just love it. So when I saw this chicken tomato roast, I was sold instantly & it didnt disappoint me. I do hope you will also like this.

Chicken Tomato Roast

Ingredients
- 1/2 kg Chicken (cut into medium size piecec)
For Marination
- 1/4 tsp Turmeric Powder
- 1 tsp Red Chilli Powder
- 1 tsp Vinegar
- Salt (to taste)
For Masala
- 3 medium Onion (sliced)
- 1 tbsp Ginger & garlic paste (each)
- 2.5 tsp Coriander Powder
- 1.5 - 2 tsp Red Chilli Powder
- 1 tsp Garam Masala
- 1/2 tsp Fennel Powder
- 2 medium Tomato (sliced)
- 3/4 cup Thick coconut milk
- Curry leaves
- Salt
- Coconut Oil
Instructions
Marinate the cleaned chicken pieces with ingredients listed under ‘for marination’ & keep in the refrigerator for half an hour.

Shallow fry the marinated chicken pieces till it becomes golden brown & the chicken is half cooked. Remove the chicken pieces from the pan.

To the same pan, add sliced onions & salt. Cook till onions become golden brown in color.

Add ginger & garlic paste & cook for 3-4 minutes.

Add coriander, red chilli, garam masala & fennel powders. Fry for a minute or so or till the oil starts appearing.

Add sliced tomatoes & curry leaves. Mix well & cook till tomatoes become soft.
Save
Add fried chicken pieces & give a good stir. Add thick coconut milk & cover & cook till the gravy is very thick. The chicken pieces should be cooked well & coated well with masala. This curry has a semi gravy consistency.Serve hot with rice/roti/appam.

Notes
I didn't fry the chicken pieces, I just cooked the marinated chicken pieces in a non stick pan with very little oil. I initially cooked the chicken on low - medium flame and once the chicken is half cooked, increase it to med - high ,to brown the chicken on both sides.
This curry has a semi dry consistency, the chicken pieces are coated well with thick masala (refer the main pic). I forgot to take the final version for the step by step, hence you see the curry with gravy in the last step ;)

Made this for Dinner..I am not a fan of coconut milk..And I tend to avoid recipes which asks for coconut milk…Today I was checking your blog for some chicken recipes and my husband saw this one and wanted me to make this..So I thought of giving it a try “manasilla mansode :P”…when the part of adding coconut milk came I thought I will skip it..but somehow ended up adding coconut milk…I somehow could not accept the combination of coconut milk in chicken..buy my husband tasted it and he was like ” this is the best chicken dish you have ever made”…and it was my chance to taste it ..and woow..now I am gonna try all those coconut milk recipes…just loved this one…Thanks a loaad dear…

I’m glad that finally you tasted chicken with coconut milk. You know what for me it’s the opposite. I really find it difficult to my chicken without coconut milk, I always end up adding a little in the end just for my “manasamadhanam” ;)

I am from Kumarakom staying in Chennai with my bachelor friends. I am working in software industry here. Very glad to say that I cook well, most of the Kottayam non-veg recipes. With your blog I polished my culinary skills. Sorry to say I was not interested in putting comments here (laziness in touching keyboard again @ home), even i tried most of the nadan recipe including tea time snacks like sukhiyan and all. I have prepared beef kallu shappu style nearly 20 times @ my different friends places. Even their moms and wives wanted me to share this recipe and I was so reluctant to do so (glorified malayali asuya.) Recently I made this beef in S’pore where i went for a short term visit from my company. I was staying with one of my frnds who settled there. I revealed my secret and introduced them to your fascinating website. Now the question, why I put comments here now? The answer is, I got an offer to prepare the same three dishes (chicken tomato roast, beef kallushappu, and my meen curry) in one of my friends marriage (not on marriage day but on the previous day night – they are hindus, so no to NV on the marriage day) but I was not able to do it b’coz of my commitments here in my company. I am back to town after a small visit to kerala. I have
prepared the fishcurry recipe as per request from one of the reader. Sorry that I have not asked for your permission to
make your kottayam meencurry recipe for reference. I tried to make my own recipe but it was not looking fine for me. So i just took your kottayam meencurry recipe and made necessary changes to make it mine. Now it looks super fine!!! here it comes.Ingredients
Fish –1 kg, cut into medium size pieces
Mustard – 2 tsp
Fenugreek (uluva) –1 tsp
Ginger – a medium piece – Finely chopped
Garlic – 10 -12 piece – Finely chopped
Small onion – 3
Chili powder – 2
– 3½ tbspCoriander powder – 1 tbsp
Turmeric powder – 1½ tsp
Cocum/kudampuli – 5-6 pieces
Curry leaves
Salt
Coconut oil
Instructions
Soak cocum in 3 tbsp water for 10 minutes. Heat the
Mustard and fenugreek and make a powder. Take the half of the powder and
marinate the fish pcs for twenty mins. Heat the Chilli, coriander and
turmeric powder for 15/20 seconds in low flame. Heat oil in a meenchatti (earthen ware)
or a pan & splutter mustard and ¼ tsp of fenugreek. Add finely chopped
ginger and garlic & stir for 3,4 minutes. When it becomes light golden
brown in color add small onion & curry leaves, make the flame to sim (important)
& saute till it becomes soft. Add the chilli, coriander and turmeric
powder and stir well for ½ minute. Make sure that the masala is not
getting burnt. Add ¼ cup water and stir for one minute again add ¼ cup of
water and salt and stir well. After 1 min add cocum along with water for
gravy & fish pieces. Combine well. Make sure that fish pieces do not
get broken in the process, it will be safer to rotate the pan to ensure
that fish & masala is mixed well. Add required amount of water &
cook till the fish is done & gravy becomes thick, it will take around
20 -25 minutes on low flame. Add the balance amount of fenugreek and
mustard powder before taking the meencurry from stove and stir well. As we add Garam masala to chicken curry and all.Notes
It tastes better the next day. I
wont usually use small onion and coriander powder or use it to a minimal
amount. So that the meen curry can be stored for 4/5 days without keeping it in
fridge.Marinating the fish pcs with
fenugreek and mustard powder will make fish pcs bit harder so that it won’t
break while cooking.Reply

I was just wondering if 3/4 cup of coconut milk is too much for half kg of chicken? I had 3.5 pounds (abt 1.5 kg) of chicken and 1 cup of coconut turned out to be a bit too much and unfortunately I couldn’t get to the consistency in the picture even after cooking for an hour. I wonder where I went wrong. I used the thick coconut milk that comes in cans.Reply

Sometimes, the fat content of the chicken is very high, in that case, I’ve noticed that it’s difficult to get a thick gravy consistency even if you cook it for a long time. Apart from this, I dont know why it happened like that :(

Maria, Very interesting post! Wanted to try a beef recipe, my first ever.Looks yummy. Even more exciting was the me-me tag. Everything is familiar – ur fear of animals, aversion to computers in school, interest in politics, obsession with bakery items. One thing to add. I also remember you as a person who has been interested in and was good at elocution and extempore in school :)

I go through similar feelings plenty of times….just wish I don’t have to stress about the spoon sizes, pics, and er, the write-up. Actually I don’t mind the pics…but the other two, I’m not very fond of ;)
Oh, I have a penchant for roasts too….yea the Kerala style roasts :)

Hey Sumsu, I was here only dear… yeah we had some issues with the comments. Its all ok now. Hey nice to know that you tried the butter cake. You steamed it in pressure cooker or appachembu? I hope you bake it more often for your MIL ;)

Hi dear I just steamed it in my idlipathram. poured water and placed the batter in a closed dabba and steamed it for 35 to 40 minutes . firts I kept the flame sim for 20 finutes and then in between raised and lowered the flame. it was too moist dear.
yes this week am making again for my mom in law. she sooo loves it. so too my one year old son.

Oh I forgot to tell Maria.I tried this out…My husband liked it sooo much. He being such a tough critic and he couldn’t like stop praising about this for like two days nonstop. Planning to make this again for a gettogether tomorrow with 1.5kg-2 kg chicken. Any suggestions? Or straight multiplication will help? Looking forward to your suggestions.. :) :)

I just saw that, I have already commented on this long back.. Oopss…But no regrets..that’s how brilliant this is..Infact one of my best friends, who’s also a new cook made this and her hubby loveddd it.
Btw it came out great..!! Everyone loved it and my hubby ate the leftovers with chapathi, appam for the next 3 days with zero complaints. :)
